Summer Fruit Chicken

A balance of caramelized fruit, and a hint of warmth makes this a meal you'll want to savor all season long.
Ingredients
- 2 lbs boneless and skinless chicken thighs
- 1 tsp dijion mustard
- 1 tsp soy sauce
- 1/2 tsp chili powder
- 1 1/2 tsps salt
- 1/8 tsp chili flakes
- 1 tsp apple cider vinegar
- 3 tbsps olive oil
- 1/2 tsp crushed garlic
- 1 jalapeno pepper, chopped fine
- 2 peaches, diced
- 2 yellow plums, diced
- sprinkle with fresh thyme
Directions
Marinade chicken over night with dijion mustard, soy sauce, chili powder, salt, chili flakes and apple cider vinegar.
Grill or pan fry in olive oil until cooked.
Sautee garlic, jalapeno, peaches and plums until soft.
Serve sauteed fruit over chicken, and sprinkle with fresh thyme.
