Wine Profile
Tasting Notes
This sparkling apple wine is made in the traditional English style. Old and new world apple varietals are grown on estate and on our sister orchard on Quadra Island. Vibrant, tiny bubbles will dance along your palate leaving lingering notes of crisp apple, clove, and wet stone. Naturally vegan-friendly and gluten free.
Vineyard Notes
Terroir - Salish Sea: Soils consisting of sandy gravelly marine over
sandy gravelly morainal leading to schistic clay at 12-16' depths.
Elevation sloping 3° seaward. Hot to moderate day temp, cooling at
night from the ocean breeze. Very mild winters, seldom reaching
below 0°C.
Farming: Sustainably farmed with no harsh chemicals, sprays or
fertilizers. Ripeness of the apples was chosen as they begin to fall
from the tree.
Winemaker Notes
Apples: European cider varietals and semi-sweet French and North American varietals. Selected variety of 50% old world cider and 50%
new world semi sweets. Pressed to stainless steel then settled and
racked following traditional sparkling methodology. Primary
fermentation took place in stainless steel. The wine was allowed to
settle and stabilize and then moved to bottle for secondary
fermentation. Left in tirage for 8 months. Hand disgorged and
dosaged to result in a traditional method sparkling apple.
